A few years ago I signed up to be a BzzAgent. It’s a cool program where I am sent products to try and then I report back with how I like them and also spread the word to my friends. It’s been a really cool way to try products I might not have otherwise experienced.

My current Bzz campaign is for Morningstar Farms which is a line of meat substitutes. I have actually tried their products before but it had been years, and frankly I’d forgotten how good they are. I particularly like their breakfast sausages and in the past I’d just eaten them straight up but decided to look at them like an ingredient instead of just a final product for our leisurely Sunday morning breakfast this week.

I started with a little olive oil in a hot pan and added 5 or so cups of fresh spinach. Sauté until just starting to wilt, and stir in 4 eggs that have been lightly beaten. Season with salt, pepper and red pepper flakes and cook stirring occasionally until the eggs are just barely set (the residual heat will finish the cooking process). Add in 2 cooked and crumbled Morningstar sausage patties. Stir to mix and then grate a little fresh Parmesan over the top and serving steaming hot.

Even my husband who is a true meat and potatoes kind of guy loved it and for around 260 calories and 26 grams of protein, it was a perfect start to the day.
