My husband loves strawberry rhubarb pie. And he’s pretty fond of vodka. Hmmmm…. this gives me an idea.
Infusing vodka is really very simple, not to mention tasty. With all the wonderful fresh fruit in season, there’s no shortage of options like the cherry I was making a couple weeks ago. For this version, we chopped up a couple stalks of rhubarb fresh from the garden, and added a cup or so of sliced strawberries (fresh from my parent’s garden). Top with vodka (lower to mid range – I use Burnett’s). Be patient (if you’re like me, that’s the hard part).
For this experiment we added another component – we stirred in 2 tablespoons of sugar to one jar, none to the other.
A couple weeks later, we had some friends over for a taste test, and the hands down winner was the one that had the sugar added with the comment that it is, “like pie in a glass”. With less calories plus the vodka kick, this just might be my husband’s new favorite version of strawberry rhubarb pie.
