Teff Porridge
Serves: 4
  • 1 cup ivory Maskal Teff grain
  • 2 cups water
  • ¼ cup maple syrup, or sweetener of choice
  • 1 Tbsp cinnamon
  • Toppings of choice – milk, syrup, apples, dates, nuts, raisins, fresh berries
  1. Toast Teff grain in a medium-sized sauce pan until it smells toasty and makes a lovely crackling sound.
  2. Add water SLOWLY! The teff pops and dances all about so slow is the key. Did I say slow?
  3. Add sweetener and cinnamon and stir to mix.
  4. Cook uncovered, stirring occasionally until the water is absorbed into the grain – about 30 minutes.
