1 lb green beans, trimmed and cut into bite size pieces
4 Tbsp olive oil + more for drizzling if desired
1 Tbsp lemon juice
3 or 4 sprigs of mint, chopped or torn
Salt & pepper
2 tsp crushed red pepper flakes
3 Tbsp sliced almonds, toasted
Instructions
Toss peaches with 2 Tbsp of the olive oil, salt and pepper.
Either place in a grilling basket sprayed with nonstick spray, skewer or carefully grill the slices directly on the grate.
Mix the green beans with the remaining 2 Tbsp of olive oil and seasoning with salt and pepper.
Place in grill basket over high heat, turning and stirring often, until beans are crisp-tender and peaches are lightly charred, about 8 to 10 minutes.
Remove from the heat, combine in a big bowl with lemon juice, mint, red pepper and almonds (and maybe just a light drizzle of some really great olive oil if you’re so inclined). Check the seasoning and add more salt & pepper if needed.
