Grilled Green Beans with Peaches & Mint
Serves: 4
  • 2 peaches, sliced into ½″ wedges
  • 1 lb green beans, trimmed and cut into bite size pieces
  • 4 Tbsp olive oil + more for drizzling if desired
  • 1 Tbsp lemon juice
  • 3 or 4 sprigs of mint, chopped or torn
  • Salt & pepper
  • 2 tsp crushed red pepper flakes
  • 3 Tbsp sliced almonds, toasted
  1. Toss peaches with 2 Tbsp of the olive oil, salt and pepper.
  2. Either place in a grilling basket sprayed with nonstick spray, skewer or carefully grill the slices directly on the grate.
  3. Mix the green beans with the remaining 2 Tbsp of olive oil and seasoning with salt and pepper.
  4. Place in grill basket over high heat, turning and stirring often, until beans are crisp-tender and peaches are lightly charred, about 8 to 10 minutes.
  5. Remove from the heat, combine in a big bowl with lemon juice, mint, red pepper and almonds (and maybe just a light drizzle of some really great olive oil if you’re so inclined). Check the seasoning and add more salt & pepper if needed.
