The weekend is in sight and since my last post was about the advantages of having breakfast at home, let’s run with another idea of something that feels like you’re at a restaurant with all the benefits of still being in your PJs.
I like breakfast burritos but often they are too big and there’s too much tortilla for me, so the plan is to slim it down by starting with a smaller sized tortilla and then piling lots of yummy toppings on top. This whole recipe is just a starting point – there are so many awesome combinations possible – so let your imagination go wild and make sure to let me know your favorites.
Breakfast Tostadas
Serves: 2
Ingredients
- 3 eggs
- 1 tsp dill
- Salt & pepper
- 2 8″ whole grain tortillas
- 2 Tbsp low fat cream cheese
- Lox
- ½ an avocado, cubed
- Green onions, sliced
Instructions
- Soft scramble the eggs, mixing in the dill and seasoning with salt and pepper to taste.
- Crisp up tortillas. I do this by turning on my gas stove and placing the tortilla right on the flame – not in a pan. With tongs I turn it often until it’s browned and slightly crispy. If you don’t have a gas range, use your broiler, but again, make sure to watch it closely.
- Spread the warm tortillas with cream cheese and then layer on the lox, scrambled eggs, and avocado and finish with a sprinkling of green onions.
