Sometimes it’s ok to keep secrets from your loved ones. Like what is in that box with the big shiny bow under the Christmas tree. Or that surprise party you’re planning. And definitely when you’re packing favorite dessert items full of things that are actually good for them.

It’s all about the salesmanship. Take this vegan gluten free brownie recipe. Present it that way and my husband would be running for the door. He doesn’t need to know that there’s no dairy or flour, let alone that there’s all kinds of healthy things in there like chia seeds, avocado and black beans. They are fudge-y and delicious without being overly sweet. Perfect with a glass of bold red wine, or I suppose milk would do too.

Nope. Secret ingredient brownies are just that – my little secret.

Secret Ingredient Brownies
Serves: 12
 
Ingredients
  • 1 15 oz. can black beans, well rinsed and drained
  • 2 Tbsp chia seeds
  • 1 small avocado
  • ¾ cup cocoa powder
  • ¼ tsp sea salt
  • 1 tsp vanilla
  • ⅔ cup coconut sugar
  • 2 tsp baking powder
  • Pistachios, or your favorite nut, finely chopped
Instructions
  1. Preheat oven to 350°F.
  2. Spray 12 standard size muffin pans with nonstick spray.
  3. Place chia seeds with 5 tablespoons water in stand mixer bowl and let sit 10 minutes.
  4. Add all remaining ingredients except for nuts and mix, scraping down sides as needed, until mixed thoroughly and smooth.
  5. Divide batter equally into prepared muffin tin and smooth the tops with a spoon or your finger. Sprinkle with nuts.
  6. Bake for 20-25 minutes or until the tops are dry and the edges start to pull away from the sides.
  7. Remove from oven and let cool for 30 minutes before removing from pan. These are delicate so remove them carefully from the tin (In other words, don't just turn the tin upside down and shake a few times like I normally do).
  8. Store in an airtight container for up to a few days or refrigerate them to keep them longer.
