Teff Porridge
- 1 cup ivory Maskal Teff grain
- 2 cups water
- ¼ cup maple syrup, or sweetener of choice
- 1 Tbsp cinnamon
- Toppings of choice – milk, syrup, apples, dates, nuts, raisins, fresh berries
- Toast Teff grain in a medium-sized sauce pan until it smells toasty and makes a lovely crackling sound.
- Add water SLOWLY! The teff pops and dances all about so slow is the key. Did I say slow?
- Add sweetener and cinnamon and stir to mix.
- Cook uncovered, stirring occasionally until the water is absorbed into the grain – about 30 minutes.
